The Crmnica is the area which spreads from the shores of the Skadar Lake towards the south and slopes of the Montenegrin mountains. The Crmnica is one of four areas of the Stara Crna Gora – Old Montenegro, inhabited with the ancient Balkan population and settlers of large immigration after the Turkish conquest in the 15th century from various areas – the Stara Srbija, Albania, Zeta which today include seven tribes-clans. The Crmnica borders in the north with the Rijecka nahija and in west and southwest which makes the natural mountainous border with the coastal tribes of Brajici and Pastrovici, and in the southwest with Spic, and in the south with Krajina while along its eastern part the Crmnica area descents toward the Skadar Lake. Prosciutto – Montenegrin most delicious smoked-matured starter, served with cheese aged in oil and homemade bread. The process of salting, desalting and pressing the prosciutto is carefully monitored and hasn’t been changed for centuries. The flavors of this dish represent the historical heritage of drying the prosciutto, combined with the tradition of the making process for the homemade bread and cheese. Montenegrin Skadar Lake is the rare place where carp lives in its natural conditions, in clear freshwater, where it feeds on natural food sources, and is caught straight from its wild habitat. Thise dish represents Montenegro and Skadar Lake in its best. Carp in Montenegro can be consumed in several ways – deep fried in vegetable oil, grilled or roasted with dried fruits. It can also be preserved by smoking on the fire, and then marinated in oil with garlic and herbs. The trout is a well known specialty in Skadar lake region. It lives in fresh water of Moraca river, which flows into the Skadar lake. Trout belongs to the group of so-called lean fish, as opposed to carp, it has no fat. The meat of the trout is fragile and does not need much time to prepare. There are dozens of recipes for preparing trout, but most often is baked in the oven or on the grill pan, and fry in oil until it is over. When it is baked in the oven, the trout is spiced out before. It is usually baked in preheated oven at 180-200 degrees for about 35-40 minutes.
