Bajilo Wine Cellar Sremski Karlovci

The Bajilo Wine Cellar is located in the cellars dating from 1864 in the very center of the beautifully arranged baroque historical core of Sremski Karlovci. The Bajilo Family features origins from the Dalmatia, from where it settled in Sremski Karlovci in 1966 and transferred here the rich viticulture traditions and wine production. Nowadays the Bajilo Wine House is run and further developed by the third and the fourth generation of the family, led Predrag Bajilo, his sons Petar and Steva and the daughter-in-law Rada. The Bajilo Family is one of the largest vine growers in Sremski Karlovci. They produce wines from the own vineyards of various grape varieties, of which 65% have been created at the Institute of Fruits and Viticulture in Sremski Karlovci. Bajilo Family Vineyards cover the surface of 13 hectares and are located on the nearby slopes of the Fruska Gora Mountain-National Park.

The Bajilo Wine Cellar in Sremski Karlovci is 50 meters long and features constant natural temperature of 11 C in all weather conditions and seasons, since its final part is set 30 meters underground. The Bajilo wine cellar is real architectural gem, in whose construction a lots of love, funding, time, efforts, dedication and patience was put. The uniqueness of the Bajilo Wine cellar is the wooden barique barrel of 3250 liters, bought in Central Serbia and brought here, and carefully rearranged in a time, with intention for a proper storage for keeping the red wine. Thanks to its pefrect location in the historical center of Sremski Karlovci, and nicely and uniquely appointed space where natural materials prevail, and the high quality wines, and catering of various food, which is fully in harmony with wines, in the restaurant with 55 seats, the Bajilo Wine cellar provides memorable and true experiences of Fruska Gora.

In the vineyards of the Bajilo Family are grown numerous local and international grape varieties, of which some 30000 liters of wine is produced per year. The Italian Riesling clon 54, selected at the Institute of Fruits and Viticulture distinguishes itself. The Rhine Riesling is another grape variety, which is significant for the wine production of Sremski Karlovci and results in excellent wines. As something new and more attractive for wine lovers and wine consumers, there is the original grape variety of Sila, also created at the Institute of Fruits and Viticulture in Sremski Karlovci, by combination of Kevedinka variety /Rose/ and Chardonnay. Trend of local variety growing is further developed by the Bajilo Family in planting the new vineyards of the muscat varieties of Neoplanta and Petra, with the aim to establish production of the dessert wine for aromatic varieties lovers. Here are also present the very famous red local variety of Portugueser, the high quality red wine, renown by its long tradition and exquisite flavor, as well as the varieties of Vranac and Cabernet Sauvignon. The future plans for wine production of the Bajilo Family include also the red variety of Probus, which might bring good results. This family run wine cellar participates for years in all the important fairs of Serbia and was prized with dozens of medals, cups and awards for quality of wines.

At the Bajilo Wine cellar in Sremski Karlovci all wines can be tasted and bought. Wine tasting includes 3-4 sorts of wines, which come along with cheese rolls and cheese. If/when visitors want to taste the famous dessert wine bermet, which is produced under well-kept /secret/ recipe designed by Medieval monks of the Fruska Gora Monasteries, the orasnice /special dry nut cake/, or even the famous kugloff cake -prepared along the traditional German recipe, best go along with wines. By its rich wine offer and hospitality to every wine lover, the Bajilo Family fully contributes to the attempt of regaining Sremski Karlovci the central position in authentic wine growing and viticulture, which greatly enriches the tourist offer of this beautiful and culturally important and reputed small town, in the near proximity of Novi Sad.
